  • Once your rice is steamed, you can let it rest for 10 minutes by spreading it thin in a shallow container while letting it stay out in the open. Once the initial heavy steam has thinned, leave it uncovered in the fridge for 30 minutes to let it cool and even dry a little. This will help it fry easier.
  • For cooking in a pan, the use of refined avocado oil works well thanks to it having high smoke point. Other high heat oils suitable for this pan-fried recipe include peanut oil, algae cooking oil or ghee.
  • Whilst this recipe on its own can be made vegan if using a plant-based oil, it is traditionally put together with Filipino breakfast meats or eggs. Plant based protein substitutes such as seitan or scrambled tofu will also pair nicely if preferred.
